Personal Sized Puffed Pancakes

Hello! So today I wanted to share a quick and easy recipe with you all. Puffed pancakes, or dutch babies, are one of my favorite breakfast foods and they are so easy to make. Most recipes make bigger pancakes that you can share, however I crave these puffed treats even when I have nobody to share them with. So here is a quick recipe for a personal sized puffed pancake

1/4 cup of milk
1/4 cup of flour
1/8 cup of sugar
1 large egg
Pinch of freshly ground nutmeg
2 tb spoons of butter
Lemon zest (optional)
Fruit (optional)
Preheat oven to 425. Melt the butter in an oven proof skillet and make sure all of the sides are coated with butter. Whisk milk, flour, eggs, sugar and nutmeg together in a bowl and then pour into skillet and cook for about a minute. The sides should begin to bubble. If you would like some lemon zest on your pancake, now would be the time to put some on. Then, place skillet in the oven for about 6-8 minutes (normal sized one usually take about 10-12). Once finished sprinkle with confectioner sugar and fruit and serve immediately and enjoy
